WHere is an easy take on a drink from the seasonal cocktail list. Designed as a large-volume prepared mix that's loaded with flavours associated with holiday season, making it ideal for a celebration. Save the extra citrus syrup for morning drinks, puddings, or to mix additional servings of bikinis.
The Bikini Cocktail
Serves 10 people
To make the Clementine Cordial (yields 750ml)
300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g caster sugar
For the Premix (produces 850ml, enough for 10)
400ml good quality vodka
100ml London dry gin
150ml peach schnapps
200ml clementine syrup (as made above)
Whole cranberries, as a garnish
Mandarin essential oil, for finishing
Instructions
Making the Citrus Syrup: Place all the components in a saucepan, bring to a gentle boil, mixing so the sugar melts. Then, remove from the burner and let it to cool down fully. Pour to a clean bottle, close it and store chilled, it will last for up to a month.
To make Batch Mix: Mix all the liquids into a large bottle, leave to sit for one hour, then strain , ideally through muslin, so it's perfectly clear.
To serve: Measure 85ml from the premix into your stirring glass filled with ice, and agitate carefully for a minute to cool it down. Strain to a chilled martini glass or a similar vessel, top with a few cranberries adding the final touch by giving it a brief mist with the mandarin essence above the glass.
